Level 1 Food Safety in Catering or Manufacture or Retail.

Candidates need no former knowledge of food safety and these are therefore ideal for use as part of a company Induction programme. The Awards could also be used as refresher training to maintain and improve food safety standards within an organisation.

Teaching time: 4 hours + test. Evaluation is by a 15 question multiple choice test, pass mark is 10/15. Maximum group size is 20.

The Ofqual approved HABC or CIEH Level 2 Award in Food Safety in Catering qualification has been developed specifically for insertion onto the Qualifications and Credit Framework with full support from People 1st, the Sector Skills Council for Hospitality, Leisure, Travel and Tourism. It is therefore fully cognisant with industry and regulatory standards as well as being recognized by Environmental Health Practitioners, Auditors and other Enforcement Officers. The aim of the Level 2 Award in Food Safety in Catering qualification is to provide candidates with knowledge of the basic food safety practices that is essential in the catering industry. This includes the hazards and risks to food safety presented by food operations and personnel together with cost-effective, practical control measures. Similarly, the level 2 qualifications for manufacturers and retail workers provide the same level of information but specifically tailored towards those industries.

Teaching time 6 hours + test. Evaluation is by a 30 question multiple choice test, pass mark is 20/30. Maximum group size is 20.

Level 3 (Intermediate) Food Safety in Catering or Manufacturing or Retail.

The Level 3 Award in Supervising Food Safety in Catering provides progression from the Level 2 Award in Food Safety in Catering and is intended principally for those who are operating in a supervisory role within the catering and hospitality industry. Qualification holders will be able to demonstrate a wide knowledge of food safety, legislation and effective supervision. They will also be able to take responsibility for the competency of the workforce and for identifying hazards and controls, monitoring controls and taking appropriate corrective action when necessary.

Teaching time 18 - 21 hours + test. Evaluation is by a 60 question multiple choice test, pass mark is 40/60.

Level 4 (Advanced) Food Safety in Catering or Manufacture.

These Level 4 Qualifications are aimed at Managers and aspiring managers and ensure that they are aware of the procedures and standards required to ensure that safe food is served at all times and that due diligence is secured. These qualifications are the most up to date available and focus on current and emerging issues relating to microbiology, chemical contamination and food allergens. They will also be invaluable for anyone looking to train food safety to levels 2 and 3 and for those thinking of starting a career in food safety enforcement or auditing.

Teaching time 36 - 40 hours. It is assessed by a single examination session consisting of two examination papers. Paper one will comprise of a 30 question multi-choice examination and paper two will consist of a choice of 5 from 6 written questions to be answered in 2 hours 30 minutes.
